Passion Fruit Ahi Tuna Salad

Serves 2

Ingredients:

2 fresh Ahi Tuna Steaks, 1 ½” thick

4 tbsp. Black and White Sesame Seeds

¼ cup Tapioca Flour

1 tsp. crushed Red Pepper (or Cyan Pepper)

Sea Salt

2 tbsp Grape seed oil for cooking

1 Fresh lime, Squeezed

Salad:

4 cups salad (Mache, Baby Arugula, Baby Spinach, and Micro Greens)

¼ cup Edamame seeds (optional)

½ Red Bell Pepper, diced in ½” cubes (optional)

2 Mandarin Oranges, peeled and chopped roughly

Dressing:

1 cup Passion Fruit Vinegar

2 tbsp. Grape Seed oil

1 tbsp. Sesame Oil

Preparation:

1- Wash and chop all the lettuces and place in a large bowl

2- Add the Red Peppers and Mandarins in the bowl

3- Take edamame,

if they are raw steam them for 5 minutes until fully cooked,

if they are precooked defrost and add them to the mix

4- Put the tapioca powder on a plate and press one side of the tuna unto it

5- Put the sesame seeds on a plate and press the side with the tapioca powder onto the sesame seeds firmly

6- Heat the grape seed oil in a nonstick skillet over medium heat

7- Place Ahi tuna sesame side down in the pan until they are golden brown.

For black and blue tuna flip over and let cook for 2 minutes more

For a more cooked version flip over and cook in the oven at 350o for 5 min

8- Remove the tuna from the heat

9- Mix the Passion Fruit Vinegar, sesame seed oil and grape seed oil together

10- Toss together all the ingredients from the salad and the dressing

11- Plate the salad and place the tuna on top.

12- Squeeze some fresh lime over the whole dish.
