2 Cod filets, 4″x4″
1 cup Coconut shavings
2 Eggs, scrambled
¼ cup flour
4 tbls. Coconut oil
2 cups white or brown rice
3 cups water
½ Pineapple cut into ½” cubes
½ cup Edamames seeds, cooked
4 New Onions (greens only), finely chopped
¼ cup Cilantro, chopped
1 cup Passion Fruit Vinegar
1- Preheat the oven to 350oF
2- Prepare the rice- Wash the rice thoroughly, combine the water bring to a boil. Let simmer covered until water is gone then remove it from the heat and stir.
4- Flower one side of the cod, egg that same side, then push the filet down firmly onto the coconut shavings
5- Over a low flame, heat the olive oil
6- Place Cod coconut side down until it is very lightly browned (about 1 min)
7- Flip over and let finish cooking crust side up in the oven.
8- Mix all the garnish ingredients together and sauté in a separate pan until warm.
9- Plate the garnish on a round plate, place the cod on top hot out of the oven pour the Passion Fruit vinegar over it.
