It is extracted from olives called Racimo (Bunch), a variety unique in the world with Chilean origin. Petralia is certainly the most award-winning Olive Oil from Chile and one of the most awarded worldwide.
Color: Green extraction, evolves into a deep golden yellow.
Taste: Very fresh and herbaceous. Notes of fresh cut grass, green tomatoes and banana. Excellent balance between herbaceous, bitter and slightly spicy tones.
Aroma: Eminently herbaceous
Maximum acidity: 0.2%
Ideal in salads, raw or cooked. Also in fresh spring vegetables, for baking, and could make exceptionally soft and pliable dough.
Excellent with grilled fish
The soft and light flavor enhances the taste of french fries, fish and meat.
