2 NY Strip Steaks
4 Yams, peeled
¼ cup Caramelized walnuts
¼ cup Butter
½ cup Whole milk
2 tbsp Maple syrup
½ cup Raspberry Vinegar
Black Pepper (to taste)
Sea salt (to taste)
1- Place yams into a pot with enough water to cover them. Bring to a boil then reduce to a simmer until fork tender. Drain the water and press through a ricer
2- Melt the butter in milk until warm and the riced yams , keep warm
3- Salt and pepper the steaks and grill them until they have reached our desired doneness.
4- Remove from the grill and cover with Raspberry Vinegar (wait at least 4 minutes to cut the steak so the juices have time to reabsorb into the meat)
5- While waiting for the steak plate the yams and top with candied walnuts
6- Drizzle a small amount of maple syrup over the walnuts
7- Cut and plate the steak then serve.
